Rice with Sweet Pork
Today sweet pork or in Vietnamese words: thit heo kho kho

Ingredients: rice, 3 spring onions, 700 grams streaky bacon, salt, pepper, 2 tablespoons sugar, 750 ml water, 2 tablespoons fish sauce

Boil the rice according pack instructions Bake in hot oil 3 chopped spring onions to soft. Add 700 grams diced streaky bacon and add salt, pepper and 2 tablespoons sugar. Stir until the meat is no longer pink. Pour about 750 ml water and bring it briefly to the boil. Then lower the heat and let it simmer for about an hour. The water should almost be dry. Add to last 2 tablespoons fish sauce and heat for 10 more minutes. Serve the sweet pork with rice and snow peas, for example. Enjoy!

Christmas Cupcakes

Christmas Cupcakes
Christmas Cupcakes can also be made on other days than Christmas!

Ingredients: 250 grams butter, 250 grams sugar, 4 eggs, 250 grams flour, 1 sachet vanilla sugar, baking powder, 2 tablespoons cocoa powder, 50 grams plain chocolate,

Preheat the oven to 160 degrees. Put in a muffin form the paper shapes (for these special days in green and red). Mix 250 grams butter with 250 grams sugar until creamy. Add gradually 4 eggs and mix until you have a pale batter. Add 250 grams flour, 1 sachet vanilla sugar and baking powder and mix it well. Fill the cupcakes with the 3/4 of the batter. Sprinkle over the cupcakes about 50 grams finely chopped plain chocolate. Add with the rest of the batter 2 tablespoons cocoa powder and mix it well. Shovel it in the chocolate cupcakes so the chocolate is well covered. Place the cupcakes for about 30 minutes in the preheated oven. Decorate the cupcakes possibly with red and green icing. Enjoy!

Macaroni with Chorizo and Tomato Sauce

Macaroni with Chorizo and Tomato Sauce
Ingredients: 1 onion, 1 garlic clove, thyme, 750 grams tomatoes, sugar, salt, pepper, macaroni, 130 grams of grated cheese, 100 grams chorizo,

Stir fry 1 finely chopped onion with 1 finely choped garlic clove and thyme to taste until the onion is golden brown. Add 750 grams of diced tomato. Lower the heat and leave to simmer for about a minute or 15. Bring to taste with salt, pepper and possibly some sugar. Allow to cool slightly and puree the tomatoes in the food processor. This sauce can be made, for example, a night in advance.

Preheat the oven to 180 degrees. Cook the macaroni al dente in boiling water with a little salt. Put the tomato sauce in an ovenproof dish. Stir in macaroni. Stir in 100 grams grated cheese and 100 grams thinly sliced chorizo. Sprinkle with a little extra grated cheese. Place the ovenproof dish about 30 minutes in the preheated oven. Enjoy!

Chocolate Spekkoek

Chocolate Spekkoek
Ingredients: 375 grams butter, 2 sachets vanilla sugar, 250 grams sugar, 250 grams caster sugar, 12 eggs, 375 grams flour, 50 grams cocoa powder,

Preheat the grill for at 220 degrees. Mix 375 grams butter with 2 sachets vanilla sugar and 250 grams sugar into a shiny mass. Divide 12 eggs. Mix the egg yolks with 250 grams caster sugar to light white mass. Beat the egg whites stiff. Mix the butter with the egg yolks and egg whites. Add 375 grams flour. Mix lightly together. Divide the batter into 2 bowls. Add to 1 bowl 50 grams cocoa powder and mix until you get a uniform color batter. Grease a springform of 22 centimeters. Scoop a layer of the light coloured batter in the springform and turn on the springform in the oven. After about 5 minutes get the springform from the oven and put a layer of chocolate mixture on top. Put it back in the oven for 5 minutes. Keep up to until you’re out of batter. If the upper layer is ready is the chocolate ’spekkoek’ also ready. Enjoy!

Greek Mushrooms with Rice

Greek Mushrooms with Rice
Ingredients: rice, 1 onion, 1 garlic clove, 150 ml white wine, 1 bay leaf, 1 sprig thyme, 1 teaspoon ground coriander , 1 dash lemon juice, 1 can diced tomatoes, 1 tin tomato puree, 1 teaspoon sugar, salt, pepper, 50 grams raisins,

Boil the rice according pack instructions. Bake on medium heat 1 chopped onion with 1 finely chopped garlic clove. Let this simmer for about 5 minutes. Add 150 ml white wine, 1 bay leaf, 1 sprig thyme and 1 teaspoon ground coriander. Let it cook for about 5 minutes to reduce. Then add 400 grams sliced mushrooms and a dash of lemon juice. Stir fry about 5 minutes. Add 1 can diced tomatoes, 1 tin tomato puree and 1 teaspoon sugar. Season with salt and pepper. Let it simmer for 10 minutes on low heat. Finally, add 50 grams of raisins. Serve the Greek mushrooms with rice. Bon appetit!

Quatre Quarts Cake with Cookie Spices
Time for a cake to bake with cookie spices. It was a ‘Quatre Quarts Cake’, a cake consisting of 4 equal parts. See the ingredients for the exact amounts.

Ingredients: 4 eggs, 250 grams sugar, 250 grams butter, 250 grams flour, 1 pinch salt, 1 sachet vanilla sugar, 1 tablespoon cookie spices,

Preheat the oven at 170 degrees. Mix 4 eggs with 250 grams of sugar until you have a creamy mixture. This could take several minutes before you get this creamy mixture. Melt 250 grams butter. Add to the creamy egg mixture 250 grams flour, melted butter, a pinch of salt and 1 sachet vanilla sugar. Mix this with a whisk to a good batter. Pour half the batter in a greased and floured cake tin. Mix the remaining batter with 1 tablespoon cookie spices. Mix this well with the batter. Pour this batter also in the cake tin. Put it cake tin approximately 60 minutes in the preheated oven. Let the cake cool well before you get it from the cake tin. Enjoy!

Stir Fried Beef

Stir Fried Beef
Ingredients: 300 grams beef, 1 tablespoon balsamic vinegar, 3 tablespoons soy sauce, 1 tablespoon sugar, 1 tablespoon curry powder, rice, 40 grams pine nuts, 1 leek, 125 grams bean sprouts, 1 garlic clove, 1 tablespoon ginger powder, 1 tablespoon chopped coriander,

Marinate 300 grams sliced beef with 1 tablespoon balsamic vinegar, 3 tablespoons soy sauce, 1 tablespoon sugar and 1 tablespoon curry powder. Let the meat marinate for about 30 minutes. Boil the rice following pack instructions. Bake 40 grams pine nuts golden brown in a dry wok. Scoop it from the pan and keep it separate. Bake the beef brown in a hot wok. If the beef is brown, add 1 chopped leek, 125 grams bean sprouts, 1 finely chopped garlic clove and 1 tablespoon ginger powder. Stir fry a minute or five, then add the pine nuts again and sprinkle with 1 tablespoon fresh chopped coriander. Serve with the rice. Enjoy!
