Tagliatelle Stroganoff

Tagliatelle Stroganoff
Ingredients: tagliatelle, 250 grams minced beef, 1 garlic clove, salt, pepper, flour, paprika, 1 onion, 250 grams mushrooms, 1 dash white wine, 1 tin tomato puree, 2 teaspoons mustard, 100 ml beef stock, 50 ml cream , parsley,

Boil the tagliatelle in boiling water with a little salt. Mix with 250 grams minced beef with 1 small finely minced garlic clove, salt and pepper. Make balls of it and roll them in a mixture of flour and paprika. Bake the balls brown in hot oil. Scoop them out the pan and keep them separate. Bake in the remaining oil 1 chopped onion until the onion has softened. Add 250 grams quarted mushrooms. Bake the mushrooms until soft. Pour a little white wine in and let the alcohol evaporate. Stirin 1 tin tomato puree, 2 teaspoons mustard and 100 ml beef stock. Bring to the boil while stirring. Put the meatballs back into the pan. Let the sauce simmer for 5 more minutes on low heat. Bring to taste with salt and pepper and add 50 ml cream and parsley and warm a bit more. Serve the meatballs with the tagliatelle. Enjoy!

Carrot Blini’s and Swiss Pork Scallops

Carrot Blini's and Swiss Pork Scallops

Ingredients: 1 carrot, 1 small onion, 1 egg, 25 grams of flour, dill, grated cheese,

Preheat the oven to 175 degrees. Mix 1 grated carrot with 1 small onion, 1 egg, 25 grams flour and dill to taste. Heat oil in a frying pan and bake the blini’s brown at both sides. Place the blini’s on a baking tray. Sprinkle grated cheese over the carrot blini’s and place the baking tray about 10 minutes in the preheated oven.

Swiss Schnitzel
Ingredients: 2 pork scallops, salt, pepper, nutmeg, 1 onion, 250 grams chestnut mushrooms, 100 ml white wine, 200 ml cream,

Cut 2 pork scallops in slices and season with salt, pepper and nutmeg. Cook the pork scallops slices brown in hot oil. Shovel the pork scallop slices from the pan and stir fry in the remaining fat 1 finely chopped onion with 250 grams sliced chestnut mushrooms for about 3 minutes. Add 100 ml white wine and let the alcohol evaporate. A 200 ml cream and bring to the boil. Add the pork scallops and let it simmer on low heat for about 10 minutes.

Serve the carrot blini’s and Swiss pork scallops with baked potatoes. Enjoy!

Christmas Cupcakes

Christmas Cupcakes
Christmas Cupcakes can also be made on other days than Christmas!

Ingredients: 250 grams butter, 250 grams sugar, 4 eggs, 250 grams flour, 1 sachet vanilla sugar, baking powder, 2 tablespoons cocoa powder, 50 grams plain chocolate,

Preheat the oven to 160 degrees. Put in a muffin form the paper shapes (for these special days in green and red). Mix 250 grams butter with 250 grams sugar until creamy. Add gradually 4 eggs and mix until you have a pale batter. Add 250 grams flour, 1 sachet vanilla sugar and baking powder and mix it well. Fill the cupcakes with the 3/4 of the batter. Sprinkle over the cupcakes about 50 grams finely chopped plain chocolate. Add with the rest of the batter 2 tablespoons cocoa powder and mix it well. Shovel it in the chocolate cupcakes so the chocolate is well covered. Place the cupcakes for about 30 minutes in the preheated oven. Decorate the cupcakes possibly with red and green icing. Enjoy!

Tagliatelle with Minced Beef and Celery

Tagliatelle with Minced Beef and Celery
Ingredients: 2 red onions, 4 celery sticks, 300 grams minced beef, 1 tablespoon flour, 100 ml red wine, 750 ml stock, 2 bay leaves, tagliatelle, salt, grated cheese,

Heat the oil in a frying pan and fry in it 2 finely chopped red onions and 4 diced celery sticks to the soft. Scoop it from the pan and keep it separate. Add some oil and bake at a higher heat 300 grams minced beef until brown. Put the red onion and celery back into the pan. Add 1 tablespoon flour. Stir fry shortly. Add 100 ml red wine and 750 ml stock. Bring to the boil briefly and then let it gently simmer on lower heat g for about an hour. Boil in the meantime tagliatelle in boiling water with salt until al dente. Serve the tagliatelle with the ragu and sprinkle some grated cheese over it. Enjoy!

Lasagne

Lasagne
Ingredients: 1 onion, 1 garlic clove, thyme, 300 grams minced pork, 1 green pepper, 250 grams mushrooms, 5 roma tomatoes, 1 tin tomato puree, salt, pepper, 100 ml stock, 50 grams butter, 50 grams flour, 500 ml stock, 75 grams mature cheese, lasagne sheets,

Preheat the oven to 180 degrees. Bake in hot oil 1 finely chopped onion with 1 finely chopped garlic clove and thyme to taste until the onion has softened. Add 300 grams minced pork and stir fry until the minced pork is brown. Add 1 chopped green pepper and 250 grams sliced mushrooms. Stir fry until the mushrooms are tender. Add 5 diced roma tomatoes, 1 tin tomato puree and 100 ml stock again. Bring to taste with salt and pepper. Allow to come to the boil and then let it simmer for about 10 minutes.

Meanwhile make the cheese sauce. Melt butter 50 grams. When the butter has melted, add 50 grams flour. Bake this briefly. Add, while stirring, gradually about 500 ml stock. Remove the sauce from the heat and stir in 75 grams mature cheese.

Put in an ovenproof dish a layer of the meat-vegetables-mixture, a layer of cheese sauce and a layer of lasagne sheets. Then a layer of meat-vegetable mixture and lasagne sheets. Finish with a layer of meat-vegetables mixture and a layer of cheese sauce . Sprinkle a little grated cheese over it. Place the ovenproof dish about 30 minutes in the preheated oven. Enjoy!

Swiss Potato Pancakes

Recipe: Swiss Potato Pancakes
Ingredients: 300 grams of cooked potatoes, 15 grams butter, 70 grams of flour, 1 egg, salt, pepper, nutmeg, grated cheese,

Melt 15 grams butter in the microwave or a saucepan. Mash 300 grams of cooked potatoes fine. Add 1 egg, the melted butter and 70 grams flour. Mash this together. Bring to taste with salt, pepper and nutmeg. Divide this mixture in half. Make a role of it and pack into foil. Put this about half an hour in the refrigerator. Heat the oven to 200 degrees. Put a pan with water with a little salt and let it cook gently. Cut the potato rolls in slices of about 1 centimeter thick. Boil it in gently in boiling water for about 2 minutes. Drain the potato panckes. Place the potato pancakes in an ovenproof dish and sprinkle grated cheese over it. Place the ovenproof dish in the preheated oven and wait until the cheese has melted. Enjoy!

Braised Beef

Ingredients: 750 grams beef, salt, pepper, flour, 400 ml fond, 1 bottle dark beer, 4 tablespoons balsamic vinegar, thyme, 3 bay leaves,

Cut into cubes 750 grams beef into cubes . Season with pepper and salt. Bake the diced beef around brown in hot butter. Add 1 tablespoon flour and shovel. Add 400 ml fond of meat, 1 bottle dark beer and 4 tablespoons balsamic vinegar. Bring to the boil. Add thyme (to taste) and 3 bay leaves. Lower the heat and let it gently braise for about 2 hour. Serve with Flemish fries and a salad. Enjoy!
