It’s been a while since I have been to IKEA even longer since I’ve eaten Swedish meatballs with cream sauce and lingonberries. Time to make it yourself, without manual with pictures and luckily no ingredient left over! The cranberry and cream sauce are also sufficient for even more meatballs than the 14 that I made!

Cook the rice according pack instructions. Bake 1 chopped onion with 2 finely chopped garlic cloves, 1 teaspoon chili jam, cinnamon, cardamom, cumin, chili powder and paprika until the onion is soft. Add 2 diced chicken breasts and cook until tender. Add 200 grams of frozen spinach. Thaw the spinach. Add 1 can diced tomatoes. Heat through thoroughly. Serve the chicken balti with rice. Enjoy!
Ingredients: 3 eggs, 275 grams sugar, 175 grams selfraising flour, 1 sachet vanilla sugar, 1 1/2 teaspoon cinnamon, 1 teaspoon cardamom, 1/2 teaspoon ground ginger, salt, 150 ml sunflower oil, 450 grams grated carrot,
Preheat the oven to 175 degrees. Mix 3 eggs with 275 grams sugar until fluffy, light whole. Add 175 grams selfraising flour, 1 sachet vanilla sugar, 1 1/2 teaspoon cinnamon, 1 teaspoon cardamom, 1/2 teaspoon ground ginger and a little salt. Mix to a batter. Add 150 ml of sunflower oil and 450 grams grated carrot. Stir the batter well. Grease a springform of 24 centimeters diameter. Sprinkle with breadcrumbs. Fill the springform with the batter. Place the springform about 1 hour in the preheated oven. Check with a skewer if cake is cooked. The skewer should come out clean. Release the carrot cake. Cool well before you cover it with cream cheese lime icing.

Mix 75 grams soft butter 100 grams cream cheese, 1 sachet vanilla sugar, 250 grams icing sugar and zest of 1 lime together until a smooth creamy mass. Brush the top and side of the carrot cake. Enjoy!

Mix 150 ml Greek yogurt with 3 finely chopped garlic cloves, 2 teaspoons paprika, 1 tablespoon garam masala and 1 teaspoon chili jam. Cut 2 chicken breasts into dices and mix it with the yogurt marinade. Cover the bowl and let the chicken marinate at least 2 hours in refrigerator. Preheat the oven to 200 degrees and fry the marinated chicken in about20 minutes.
Tikka Masala Sauce
Ingredients: 1 onion, 1 teaspoon cardamom, 1 garlic clove, 1 can diced tomatoes, 250 ml cream, 1 tablespoon garam masala, 1 teaspoon cinnamon, salt, 2 tablespoons slivered almonds,
Bake in hot oil 1 finely chopped onion with 1 finely chopped garlic clove and 1 teaspoon cardamom until the onion is browned. Add 1 can diced tomatoes, 250 ml cream and 1 tablespoon garam masala and let it thicken by half. Season with a little cinnamon and salt. Stir in the ‘chicken tikka’ and heat it for 5 minutes. Before serving sprinkle a bit slivered almonds over.
Serve with rice or naan. Enjoy!
