Ingredients: 150 ml Greek yoghurt, 1 small onion, 3 garlic cloves, 2 teaspoons paprika, 2 teaspoons chili powder, 1 tablespoon garam masala, lemon juice, 2 chicken breasts, coriander

Mix 150 ml Greek yogurt with 1 small onion, 3 finely chopped garlic cloves, 2 teaspoons paprika, 2 teaspoons chili powder, 1 tablespoon garam masala and a dash of lemon juice. Cut 2 chicken breasts into cubes and stir it with freshly chopped coriander with the yogurt marinade. Cover the bowl well and let the chicken marinate overnight in the refrigerator. Preheat the oven to 200 degrees and fry the marinated chicken until cooked in about 20 minutes.

Chicken Tikka Masala
Ingredients: 1 onion, 1 teaspoon cardamom, 1 garlic clove, 1 can diced tomatoes, 1 tablespoon garam masala, 1 teaspoon cinnamon, 1 teaspoon chilli powder, 1/2 tablespoon brown sugar, 250 ml cream, 55 grams almond flakes,

Fry in hot oil 1 finely chopped onion with 1 teaspoon cardamom until the onion has browned. Add 1 finely chopped garlic clove and fry 1 minutes. Add 1 can diced tomatoes and let it thicken up to half. Add 1 tablespoon garam masala, 1 teaspoon cinnamon, 1 teaspoon chilli powder, 1/2 tablespoon brown sugar, 250 ml cream, 55 grams almond flakes and the Chicken Tikka and heat 5 more minutes.

Serve with naan bread. Enjoy!

Ingredients: 375 grams butter, 1 vanilla pod, 500 grams white caster sugar, 12 eggs, 375 grams flour, 1 pinch of salt, 2 dessert spoons green food coloring, 3 tablespoons cinnamon, 5 teaspoons ground cloves, 3 teaspoons nutmeg, 3 teaspoons cardamom,

Preheat the grill to 220 degrees. Mix 375 grams butter with the seeds taken from 1 vanilla pod and 250 grams white caster sugar into a shiny mass. Divide 12 eggs. Mix the egg yolks with the other 250 grams white caster sugar to a foamy mass. Beat the egg whites until stiff. Mix the butter with the egg yolks and egg whites. Add 375 grams of flour and a pinch of salt. Mix together with a spatula. Divide the batter into 2 bowls. Add to one bowl 2 dessert spoons of green food coloring, and to the other bowl 3 tablespoons cinnamon, 5 teaspoons ground cloves, 3 teaspoons nutmeg and 3 teaspoons cardamom and mix it until you have a good batter, taste if it needs some more spices.

Grease a springform of 20 centimeter. Spoon a layer of green batter and place the springform at a top grit under the grill. After about 5 minutes you get the springform from the oven and it takes you one layer of the spiced batter. Turn it in the oven again for about 5 minutes in the oven. This you have to do layer after layer until you haven’t got any batter. After 5 layers batter put the springform in a lower grid under the grill. When the upper layer is ready, get the spekkoek from grill to cool. Enjoy!

Ingredients: 4 pita breads, 1 onion, 3 garlic cloves, 1 chilli pepper, cumin, ginger powder, cardamom, cinnamon, turmeric, coriander leaves, 2 chicken breasts, 1 tin diced tomatoes, salt, pepper, 2 tablespoons mango chutney, 200 ml coconut milk,

Preheat the oven to 200 degrees and heat the pita breads about 8 minutes. Bake in hot oil 1 chopped onion and 3 finely chopped garlic cloves until the onion is soft. Add 1 chilli pepper and the spices cumin powder, ginger powder, cardamom, cinnamon, turmeric and coriander leaves to own taste. Add 2 diced chicken breast and stir fry around brown. Add 1 tin diced tomatoes and let it all simmer on low heat for about 25 minutes. Then add 2 tablespoons mango chutney and 200 ml coconut milk. Let it again simmer for about 15 minutes. Serve with the pita breads. Enjoy!

Ingredients: 375 grams butter, 2 sachets vanilla sugar, 500 grams white caster sugar, 12 eggs, 375 grams flour, 1 pinch of salt, 3 tablespoons cinnamon, 5 teaspoons clove powder, 3 teaspoons nutmeg, 3 teaspoons cardamom,

Preheat the grill at 220 degrees. Mix 375 grams butter with 2 sachets vanilla sugar and 250 grams caster sugar to a shiny mass. Subdivide 12 eggs. Mix the egg yolks with 250 grams caster sugar to a creamy mass. Beat the egg whites stiff. Mix the butter with the egg yolks and egg whites. Add 375 grams flour and a pinch of salt. Mix this together. Divide the batter into 2 bowls. Add into 1 batter 3 tablespoons cinnamon, 5 teaspoons clove powder, 3 teaspoons nutmeg and 3 teaspoons cardamom and mix until you have a uniform color batter. Grease a spring form of 22 centimeters. scoop a layer of the light batter and turn on the spring form on the highest state of the grid in the oven. After about 5 minutes get the spring form from the oven and scoop a layer of the dark batter on top. Put this back in the oven for about 5 minutes. Do this until you haven’t any batter left. After 5 layers batterput the spring form at a lower grid in the oven. If the upper layer is ready the ‘spekkoek’ also isready. Enjoy!
