Penne a la Michel
Ingredients: 1 aubergine, 1 onion, 1 carrot, 1 can diced tomatoes, 1 garlic clove, pepper, salt, basil, oregano, 50 grams of grated cheese

Chop the onion and cut the carrots into cubes, put it into a pan with a little oil and place the pan on a low heat. Add 1 chopped garlic clove and season with pepper and salt. After 15 minutes add 1 can diced tomatoes and let it simmer for approximately half an hour. Cut the aubergine into cubes and place them on kitchen paper, sprinkle the diced aubergine with salt and leave about 20 minutes. Bake the aubergine about 10 minutes with oregano in hot oil. Let the diced aubergine then leaking on a paper kitchen towel. Boil the penne al dente in boiling water with some salt. Add the aubergine to the tomato sauce together with about 50 grams of grated cheese. Let the cheese melt. Sprinkle some chopped basil on the sauce. Serve with penne. Enjoy!

Green Cabbage with Aubergine

Green Cabbage with Aubergine
Cook 150g diced bacon in a hot frying pan or wok. When the bacon is crispy add 1/2 shredded green cabbage, 1 diced aubergine (eggplant) and stirfry thisa few minutes. Add 2 tablespoons ketjap manis (or soy sauce). Season it lower the heat and let it simmer fot about 10 minutes. Serve with some potatoes. Enjoy!

Aubergine stuffed with Spinach, Tomato and Chorizo

Aubergine stuffed with Spinach, Tomato and Chorizo
Ingredients: 1 aubergine, 50 grams chorizo, 1 tomato, 100 grams spinach, grates cheese,

Number of persons: 2

Cut an aubergine in half. Scoop some flesh out of the aubergine. Add some salt over the aubergine and fry them in a frying pan for about 4 minutes on the ‘flesh’-side. Place the aubergine halves onto a baking sheet. Meanwhile fry 50 grams finely sliced chorizo in hot oil, add 1 finely chopped tomato and 100 grams chopped spinach. Cook for about 4 minutes. Remove from the heat and season it well. Spoon the filling mixture into the aubergine halves. Sprinkle some grated cheese over it and put the baking sheet into the preheated oven at 180C (fan) for about 15 minutes. We ate some potatoes with it. Enjoy!
