Bake 1 chopped onion with 1 finely chopped garlic clove, 1 teaspoon chili jam, some ginger powder and some cumin until the onion is soft. Sprinkle 1 diced chicken breast with salt, pepper, curry powder and a little flour, make sure everything is ‘powdered’. Add the chicken and fry the chicken is brown. Add 1 can diced tomatoes and 200 ml coconut milk. Stir well. Leave to simmer for 10 minutes. Make a paste 1 tablespoon cornstarch with cold water. Add to the sauce.
