Cook the rice in 350 ml vegetable stock in about 12 minutes or until tender. It is completely dry cooked. Let the rice steam. Bake 1 chopped onion with 1 finely chopped garlic clove until the onion is soft. Gradually add 300 grams spinach. Let the spinach shrink. Add 2 diced tomatoes. Fry briefly. Season with salt and pepper. Add the rice and heat through yet equally well. We had a nut burger with it. Enjoy!
