Boil 500 grams potatoes in a layer of water and a little salt until cooked. Cook 1 sliced red onion and 1 finely chopped garlic clove and some thyme until the onion is soft. Add 1 diced eggplant and 1 teaspoon chili powder. Add a splash of water and simmer on low heat for about 5 minutes. Add 250 grams halved cherry tomatoes and the boiled potatoes. Season with salt and pepper. Just heat a bit more. Meanwhile, fry the catfish brown on both sides, this takes about 3 minutes for thin fillets for thicker version longer. Serve the fried catfish with potato vegetable dish. Enjoy!
