Bake 1 chopped onion, 2 finely chopped garlic cloves and thyme in hot oil until onion is soft. Add 200 grams risotto. Stir. Add a dash of white wine. Let the alcohol evaporate. Gradually add about 800 ml vegetable stock (may be slightly more or less) and keep stirring occasionally. Bake in another pan 250 grams sliced mushrooms with 50 grams sliced salami in hot butter until the mushrooms are soft. When the risotto is cooked, it has still just a little bite, then you add the mushrooms, salami and 75 grams grated cheese with it. Stir until cheese is melted.Enjoy!
