Boil 200 grams of rice according pack instructions. Let the rice cool. Cook 1 small cauliflower cut into florets until the cauliflower is done.
Cook 1 chopped onion with 1 finely chopped garlic clove and 1 tablespoon curry powder in hot butter until the onion is soft. Add 100 grams mixed nuts with raisins and fry for 1 minute. Add the cooled rice and 50 grams thawed spinach. Heat through thoroughly.
Make the cheese sauce by melting. 50 grams butter Add 50 grams flour and fry briefly. Gradually add about 500 ml vegetable stock. Remove the pan from the heat and stir in about 100 grams grated cheese. Let the cheese melt. Bring the cheese sauce to taste with some pepper.
Serve the cauliflower with cheese sauce and rice with nuts and spinach. Enjoy!
