Cook the rice according pack instructions. Fry in hot oil 3 tablespoons Thai red curry paste until it has a fragrance. Add 1 sliced chicken breast with 1 finely chopped onion. Bake briefly. Add 1 diced red pepper, 250 grams sliced mushrooms and 3 sliced spring onions. Bake also briefly. Add 400 ml coconut milk. Stir well, making it a light orange color. Leave it to simmer for about10 minutes over medium heat. Season with 2 tablespoons sugar and 2 tablespoons fish sauce. Serve the Thai curry with rice. Enjoy!
