Ingredients: 15 eggs, 500 grams butter, 400 grams caster sugar, 2 sachets vanilla sugar, 350 grams flour, 1 teaspoon salt, 9 teaspoons cinnamon, 4 teaspoons anise powder 3 teaspoons ground cloves, 3 teaspoons nutmeg, 3 teaspoons cardamom,
before start to bake
Preheat the oven to 200 degrees Celcius. Cover the bottom of 2 springform with parchment paper. Grease the edges well. Put all the ingredients ready. Put 2 mixing bowls ready. 1 Make sure your mixer bowl and whisks are free of grease.
Preperation of the batter
Split 15 eggs. Put the egg whites in the first mixing bowl and the yolk in the other mixing bowl. Beat the egg whites until stiff. Put this aside. Put with the egg yolks 500 grams butter, 400 grams caster sugar and 2 sachets vanilla sugar. Mix on high speed until you have a smooth batter. Add 350 grams flour and 1 teaspoon salt. Mix well. Then mix with a spatula the egg whites into the batter. Divide the batter between the two mixing bowls. Add in one mixing bowl the spices (9 teaspoons cinnamon, 4 teaspoons anise powder 3 teaspoons ground cloves, 3 teaspoons nutmeg 3 teaspoons cardamom) the batter. Mix with a spatula until you have an even color.
Baking the spekkoek
Bring in both spring forms a thin layer of the light batter, spread out on the bottom. Put the springforms in the oven and bake the layer in about 4 minutes or until done (can be longer, but shorter, that depends on your oven). After the first layer, you can reset the oven to 160 degrees. Remove if the layer is cooked the springforms from the oven and spread the next layer, the dark batter, on. Put back in the oven and bake until done in about 4 minutes. Do this again for the light batter and so on until you haven’t got any batter. Let the cake cool in the form of bacon. Make loosen the edge with a knife and remove the border. Cut the spekkoek (layer cake) into wedges. The spekkoek can be kept in the freezer. Enjoy!
