Preheat the oven to 200 degrees Celcius. Bake 1 chopped onion with 2 finely chopped garlic cloves and some thyme until the onion is soft. Add 1 sliced leek. Bake until the leek is soft. Allow to cool. Beat 2 eggs. Mix the eggs with 250 grams mascarpone cheese, lemon juice, salt and pepper. Stir well. Line a greased pie dish with ready-made pie dough. Prick holes in the bottom. Spoon the leek and onion mixture into the pie dish. Pour the mascarpone mixture in. Cut 250 grams cherry tomatoes in halves. Place the cherry tomatoes cut-side up in the mascarpone. Sprinkle grated cheese over. Fold the pastry a little inside. Put the pie dish about 30 minutes in the preheated oven. Let the pie cool slightly. Enjoy!
