Bake 250 grams sliced ​​mushrooms in hot butter until the mushrooms are soft. Remove from the pan and keep it aside. Add some oil. Fry in the hot oil 1 chopped onion with 2 finely chopped garlic cloves and some thyme until the onion is soft. Add 200 grams risotto rice. Stir so the rice has a shine. Add a dash of white wine. Allow the alcohol to evaporate. Gradually add 1 liter vegetable stock, stirring occasionally. In about 20 minutes the risotto is done. Add, if the risotto is cooked, the mushrooms and 75 grams grated cheese. Let the cheese melt. Enjoy!
