Preheat the oven to 200 degrees. Bake 1 chopped onion with some thyme until the onion is soft. Add 1 diced chicken breast. Bake until the chicken is browned. Add 250 grams sliced mushrooms and 200 grams peas. Bake until the mushrooms are tender (stirring occasionally).
Meanwhile, make the cheese sauce. Melt 50 grams butter. Add to the melted butter, 50 grams flour. Fry the flour briefly. Remove the pan from the heat. Stir about 500 ml of milk. Season with salt, pepper and 1 teaspoon mustard. Stir about 75 gram grated cheese to the sauce when the sauce has the desired thickness.
Divide the chicken and vegetables over 3 ramekins. Spoon the cheese sauce over it. Cover the ramekins with puff pastry. Put the ramekins about 20 minutes in the preheated oven. Enjoy!
