Number of persons: 2
Preheat oven to 200 degrees. Let 4 sheets puff pastry thaw. Cut the pork tenderloin in half. Sprinkle with salt and pepper. Fry the pork tenderloin in hot butter brown. Remove the pork tenderloin from the pan and allow to cool. Bake in the remaining butter with 1 chopped onion with 1 finely chopped garlic clove until the onion is soft. Add 250 grams sliced mushrooms and cook them until the mushrooms are tender.
Take 2 sheets of puff pastry together, do the same for the remaining 2 sheets puff pastry. Spoon a small amount of mushrooms on puff pastry. Coat the pork tenderloin lightly with some curry sauce and put it on the mushrooms. Spoon some mushrooms over the pork. Fold the puff pastry around the pork tenderloin. Place the packets on a baking sheet covered with parchment paper and place the baking sheet in preheated oven for about 20 minutes.
Make with the remaining mushrooms a mushroom sauce. Let the mushroom-onion mixture get warm over low heat. Add a splash cream. Season to taste with salt and pepper.
Serve the pork tenderloin in puff pastry with mushroom sauce, baked potatoes in butter and a salad. Enjoy!
