Preheat the oven to 180 degrees. Cut 2 tenderloins into strips. Sprinkle with salt and pepper and coat the tenderloins strips in flour. Then get the tenderloin through a beaten egg and bread crumbs seasoned with dried oregano. Fry the tenderloin stripes in hot oil brown. Place the steak slices then into a baking dish.
Bake 1 chopped onion with 1 minced garlic clove until the onion is soft. Add 1 thinly sliced carrot and cook about 5 minutes. Add 3 diced tomatoes and 1 can diced tomatoes. Season to taste with salt and pepper. Warm for 5 minutes. Puree with a handblender. Add 2 sliced spring onions.
Pour the tomato sauce over the tenderloin slices in the baking dish. Top with mozzarella and grated cheese. Place the baking dish approximately 20 minutes in the preheated oven.
Serve with a salad and baked potatoes. Enjoy!
