Preheat oven to 180 degrees. Bake in hot butter 1 chopped onion and 2 chopped garlic cloves until the onion is soft. Add 1 can diced tomatoes and 1 tin tomato puree. Crumble a stock cube over it and stir well. Add 1 drained can corn and 3 sliced spring onions. Heat for about 5 minutes. Divide between 2 small baking dishes. Divide the nacho cheese chips and mozzarella over it. Place over both dishes a slice of cheese. Place the baking dishes approximately 10 minutes in the preheated oven. Serve with some extra nacho cheese chips (the chips are indeed soft in sauce). Enjoy!
