Cook the spaghetti al dente in boiling salted water. Bake 1 chopped onion with some thyme until the onion is soft. Add 1 diced zucchini and cook until the zucchini is tender. Add 1 can diced tomatoes and 1 crumbled vegetable stock cube. Let simmer about 5 minutes. Mash roughly with a hand blender. Serve with spaghetti. Enjoy!
