Cook the rice according pack instructions. Bake 1 diced chicken breast, seasoned with salt and pepper, until browned. Add 2 chopped onions, 1 finely chopped garlic clove and currypowder to taste. Cook about 5 minutes. Add 3 diced tomatoes, 1 can peas and carrots (drained) and 200 ml coconut milk. Bring to the boil. Add 1 peeled and diced apple. Let it simmer 10 minutes. Serve with rice. Enjoy!
