Cook the rice according to the instructions on the package. Bake 1 diced chicken breast until browned. Add 1 chopped onion, 2 finely chopped garlic cloves and 1 diced apple (peeled). Cook about 5 minutes. Add 1 can diced tomatoes, 1 can peas and carrots (drained) and 200 ml coconut milk. Bring to the boil. Crumble a stock cube over it. Let it simmer for about 10 minutes. Serve with rice. Enjoy!
