Bake 1 chopped onion with 1 finely chopped garlic clove and 1 tablespoon Patak’s Tikka Masala curry paste until the onion is soft. Add 1 diced chicken breast and cook the chicken breast brown. Add 1 peeled and diced apple and cook briefly. Add a pot of peas and carrots and 250 ml coconut milk and 1/2 can of tomato puree. Bring to the boil and let it simmer for 10 minutes. Season to taste with a little salt. Serve with naan bread. Enjoy!
