Bake 8 slices bacon until crispy and scoop it from the pan. Bake in the remaining fat 250 grams sliced mushrooms and cook until the mushrooms are soft. Remove the mushrooms from the pan. Bake 1 chopped onion with 1 finely chopped garlic clove until the onion is soft. Stir 250 grams risotto rice to the onion. Add a dash of white wine and let the alcohol evaporate. Add chicken stock until rice is completely covered. Stir and let it stand. Add chicken stock again and again if necessary until rice is tender. Add the bacon and mushrooms back into the pan and finally grated cheese to taste. Let the cheese melt while stirring and serving. Enjoy!
