Preheat the oven to 180 degrees. Mix the mashed potatoes with 3 spring onions and put it 20 minutes in the preheated oven. Bake 1 chopped onion in hot oil until soft. Add the sliced carrots and 200 ml stock. Let simmer for about 15 minutes or until the carrots are tender. Serve the carrots with the potatoes. Enjoy!
