Chicken with Apple Sauce
Ingredients: 2 teaspoons sambal, 1/2 tablespoon oil, rosemary, water, 2 chicken breasts, 1 onion, 2 apples, 2 tablespoons syrup, 100 ml water,

Make a marinade of 2 teaspoons sambal, 1/2 tablespoon oil, rosemary to taste and a splash of water. Rub 2 chicken breast with this marinade and leave the chicken breast marinate at least one hour in the marinade. Bake the chicken breast brown with 1 chopped onion in hot butter. Remove the chicken breasts from the pan and add 2 peeled and diced apples, 2 tablespoons syrup and 100 ml water. Bring the sauce to the boil. Lowe the heat lower and put the chicken breasts back in the pan. Let the chicken breasts be cooked in 15 to 20 minutes. Serve with baked potatoes and a salad. Enjoy!

Spekkoek

Spekkoek
I haven’t got a good translation for this ‘Spekkoek’, it is a sort of cake with all kind of spices. Originally from Indonesia.

Ingredients: 375 grams butter, 2 sachets vanilla sugar, 500 grams white caster sugar, 12 eggs, 375 grams flour, 1 pinch of salt, 3 tablespoons cinnamon, 5 teaspoons clove powder, 3 teaspoons nutmeg, 3 teaspoons cardamom,

Preheat the grill at 220 degrees. Mix 375 grams butter with 2 sachets vanilla sugar and 250 grams caster sugar to a shiny mass. Subdivide 12 eggs. Mix the egg yolks with 250 grams caster sugar to a creamy mass. Beat the egg whites stiff. Mix the butter with the egg yolks and egg whites. Add 375 grams flour and a pinch of salt. Mix this together. Divide the batter into 2 bowls. Add into 1 batter 3 tablespoons cinnamon, 5 teaspoons clove powder, 3 teaspoons nutmeg and 3 teaspoons cardamom and mix until you have a uniform color batter. Grease a spring form of 22 centimeters. scoop a layer of the light batter and turn on the spring form on the highest state of the grid in the oven. After about 5 minutes get the spring form from the oven and scoop a layer of the dark batter on top. Put this back in the oven for about 5 minutes. Do this until you haven’t any batter left. After 5 layers batterput the spring form at a lower grid in the oven. If the upper layer is ready the ’spekkoek’ also isready. Enjoy!

Tomato Leek Quiche

Tomato Leek Quiche
Ingredients: 1 leek, 250 grams cherry tomatoes, 250 grams mascarpone, 2 eggs, lemon juice, salt, pepper, thyme,

Preheat the oven at 200 degrees (fan). Make 1 leek clean and cut them into pieces of 5 cm. Cut the leeks into strips. Blanch the leeks in boiling water with some salt. Cut 250 grams cherry tomatoes in halves. Make a mixture of 250 grams mascarpone, 2 eggs, lemon juice, salt and pepper. Pour off the leeks and rinse it with cold water. Coat a greased pie tin with ready-to-eat savoury pie dough. Prick holes in the soil. Put the leeks in the pie tin. Pour the mascarpone mixture on it. Place the cherry tomatoes on the top of the mascarpone. Sprinkle thyme to taste. Put the pie tin approximately 30 minutes in the preheated oven. Let the quiche cool slightly. Enjoy!

Spaghetti with Red Pepper and Mushrooms

Spaghetti with Red Pepper and Mushrooms
Ingredients: spaghetti, salt, 300 grams minced beef, pepper, paprika, 1 red pepper, 250 grams mushrooms, 2 tins tomato puree, rosemary,

Cook the spaghetti in boiling water with some salt. Bake in hot oil 300 grams minced beef until brown. Season with salt, pepper and paprika. Add 1 chopped red pepper and 250 grams sliced mushrooms. Stir fry until the mushrooms have softened. Add 2 tins tomato puree and rosemary to taste. Stir well. Lower the heat and let it simmer for 15 minutes. Serve with spaghetti. Enjoy!

Chicken in Cream Sauce

Chicken in Cream Sauce
Ingredients: 2 chicken breasts, salt, pepper, nutmeg, 1 onion, 250 grams mushrooms, 100 ml white wine, 100 ml chicken stock, 100 ml cream, mace, thyme, parsley,

Sprinkle 2 chicken breasts with salt, pepper and nutmeg. Bake the chicken breast brown at both sides in hot butter. Remove the chicken breasts from the pan and bake in the remaining fat 1 chopped onion until the onion is soft. Then add 250 grams silced mushrooms and bake until soft. Add with 100 ml white wine and cook until the alcohol has vaporized. Add 100 ml chicken stock, 100 ml cream, mace, thyme and parsley. Place the chicken breasts back in the pan. Let the chicken be cooked in 20 minutes. Serve with baked potatoes, for example. Enjoy!

Oriental Cauliflower

Oriental Cauliflower
Ingredients: rice, 300 grams cauliflower, salt, 3 spring onions, 1 garlic clove, 1 chilli pepper, 100 grams peanuts, 2 tablespoons soy sauce, 3 tablespoons rice vinegar

Boil the rice according pack instructions. Boil about 300 grams cauliflower florets until al dente in water with some salt. Bake in hot oil 3 sliced spring, 1 finely chopped garlic clove and 1 deseeded and finely chopped chilli pepper. Stir fry about 2 minutes. Add 100 grams peanuts and the cauliflower and stir fry about 2 minutes. Finally, add 2 tablespoons soy sauce and 3 tablespoons rice vinegar. Stir fry for about 5 minutes. Serve the Oriental cauliflower with the rice. Enjoy!

Apple Pie Ice Cream

Ingredients: 800 ml milk, 3 tablespoons apple spread, 1 egg, cinnamon,

Heat, while stirring, 800 ml milk with 3 tablespoons apple spread, 1 egg and a pinch of cinnamon. Bring just under boiling point. Let it cool completely and pour the mixture into the ice machine. Leave the ice machine on for about 30 minutes. Scoop the soft ice in a lockable bin and put it at least 2 hours in the freezer. Enjoy!
