Vegetable Bolognese

Ingredients: spaghetti, 1 onion, 1 garlic clove, 1 carrot, 1 red pepper, 1 fennel, 1 can peeled tomatoes, 150 ml vegetable stock, 2 tablespoons balsamic vinegar, thyme, basil, salt, pepper, mozzarella,
Cook the spaghetti in boiling water with a little salt al dente. Bake in hot oil 1 chopped onion, 1 finely chopped garlic clove, 1 sliced carrot, 1 sliced red pepper and 1 sliced fennel for about 4 minutes. Add 1 can peeled tomatoes, 150 ml vegetable stock, 2 tablespoons balsamic vinegar, thyme, basil, salt and pepper. Bring out to boil. Lower the heat and let it simmer on medium heat for about 25 minutes. Add in the last minutes mozzarella and let it melt. Serve with spaghetti. Enjoy!
