Penne alla Michel

Ingredients: 1 aubergine, 1 onion, 1 carrot, 1 can diced tomatoes, 1 garlic clove, pepper, salt, basil, oregano, 50 grams of grated cheese
Chop the onion and cut the carrots into cubes, put it into a pan with a little oil and place the pan on a low heat. Add 1 chopped garlic clove and season with pepper and salt. After 15 minutes add 1 can diced tomatoes and let it simmer for approximately half an hour. Cut the aubergine into cubes and place them on kitchen paper, sprinkle the diced aubergine with salt and leave about 20 minutes. Bake the aubergine about 10 minutes with oregano in hot oil. Let the diced aubergine then leaking on a paper kitchen towel. Boil the penne al dente in boiling water with some salt. Add the aubergine to the tomato sauce together with about 50 grams of grated cheese. Let the cheese melt. Sprinkle some chopped basil on the sauce. Serve with penne. Enjoy!
