Boil the rice according to the directions on the package. Cook in hot oil on low heat 2 tablespoons mild curry paste (Patak’s ) for about a minute. Then higher the heat and cook 1 diced chicken breast for about 5 minutes. Then add 1 cauliflower (cut in florets) and 2 finely sliced onions. Stir fry 2 more minutes. Pour a can coconut milk (400 ml) and bring to the boil. Let it boil a minute, then lower the heat and let it simmer for about 20 minutes. Season it with coriander, salt and pepper. Serve with the rice. Enjoy!
