Roast Beef with Pommes Duchesses

As a main course, we had roast beef with pommes duchesses. Rub the roast beef with salt and pepper and bake it in hot butter. If the roast beef is brown on all sides then lower the heat and add some water. Put the lid on the pan and let the roast beef simmer for 25 minutes. Time depends how you want, more rose than shorter, more done than longer. For the pommes duchesses cook a kilo of potatoes until done. Split meanwhile 3 eggs. If the potatoes are cooked and mash them finely with a masher. Pour some milk, a knob of butter, 3 egg yolks, nutmeg, salt and pepper. Do it in a pastry bag with a large star tip and make rosettes on a tray lined with baking paper / mat. Place the tray in the preheated oven at 175 degrees (fan) for about fifteen minutes.
