Pasta with Spinach and Pork Scallops in Mustard Sauce
Cook the pasta in boiling water with some salt. Cut 2 pork scallops in strips and fry this brown in hot oil. Boil, steam or stir fry 300 grams spinach (I stir fried it). Put it from the pan. Pour 100 ml chicken stock in the pan and add 1/2 tablespoon mustard. Bring it to the boil. Add 2 tablespoons creme fraiche and stir it well to a smooth sauce. Then you add a splash lemon juice and parsley to taste. Put the pork scallop strips back in the pan and heat just a bit moret. On your plate the pasta first, then the spinach and then the pork scallop strips with mustard sauce. Enjoy!
