Oven Baked Chicken Breast

Oven Baked Chicken Breast
Chop 1 leek in rings and place in a greased oven dish. Mix thyme, salt and pepper to taste. Wrap 2 chicken breast each with 5 or 6 slices bacon. Place the chicken breasts on the leek rings in the oven dish. Place the oven dish in a preheated oven at 200C for about 25 minutes. Enjoy!

Green Cabbage with Aubergine

Green Cabbage with Aubergine
Cook 150g diced bacon in a hot frying pan or wok. When the bacon is crispy add 1/2 shredded green cabbage, 1 diced aubergine (eggplant) and stirfry thisa few minutes. Add 2 tablespoons ketjap manis (or soy sauce). Season it lower the heat and let it simmer fot about 10 minutes. Serve with some potatoes. Enjoy!

Triple Chocolate Muffins

Triple Chocolate Muffins
Break 100g plain chocolate, 100g milk chocolate and 100g white chocolate in little pieces. Mix in a bowl 300g selfraising flour with 100g caster sugar. Mix in another bowl 1 beaten egg with 250ml milk and 60g melted butter. Pour this mixture with 1 tablespoon vanilla extract and the chocolate into the flour mixture. Mix it well. Line in a muffin tray with paper cupcakes. Spoon the batter into the cupcakes. Place the muffin tray into a preheated oven at 180C (fan) for about 25 to 30 minutes. Cool down the muffins before eating them! Enjoy!

Rice with Marinated Pork Chops, Apple and Mushrooms

Rice with Marinated Pork Chops, Apple and Mushrooms
Make a marinate with the following ingredients: 1 tablespoon oil, 2 tablespoons ketjap manis (sweet Indonesian soy sauce), 1 tablespoon curry powder, 1 finely chopped garlic clove, salt and pepper. Chop 200g pork chops in dices and marinate it. (Best is marinating it a night before, but an hour before cooking is also fine). Cook the rice following pack instructions. Cook in hot oil 1 finely chopped onion until soft. Add the marinated pork chops in and cook until it has a nice colour. Add 200g sliced mushrooms and 1 cored and diced apple (you don’t have to peel it). And stir fry until the mushrooms are soft. Serve with the rice. Enjoy!

Tagliatelle with Broccoli and Mushrooms

Tagliatelle with Broccoli and Mushrooms
Cook tagliatelle according pack instructions. Cook 200g broccoli florets shortley until just done. Cook 1 finely chopped onion until the onion is soft. Add 200g sliced mushrooms and the broccoli florets. Stir fry this until the mushrooms are soft. Add 250ml passata and 100g philadelphia cheese. Just heat a little bit more and serve with the tagliatelle. Add some grated cheese over it. Enjoy!

Noodles with Mushrooms and Minced Pork

Noodles with Mushrooms and Minced Pork
Cook noodles according pack instructions. Make a sauce with following ingredients:2 tablespoons soy sauce, 1 tablespoon hoisin sauce, 1 tablespoon soy bean paste, 1 teaspoon brown sugar and 125 ml water. Stirr wel and set aside. Cook in hot oil 300g minced pork until it’s brown. Add 200g sliced mushrooms and 3 spring onions (chopped in rings). Stir fry until the mushrooms are soft. Add the sauce and stir dry for another 5 minutes. To bind the sauce add a mixture of 1 tablespoon corn flour and 1 tablespoon rice wine. Drain the noodles and add to the minced pork. Just heat a little more and serve! Enjoy!

Oven Baked Pasta with Gorgonzola

Oven Baked Pasta with Gorgonzola
Cook a short pasta (for example fusilli or penne) according pack instructions. Cook in hot oil 1 finely chopped garlic clove, 1 leek (chopped in rings) and 200g sliced mushrooms until the mushrooms are soft. Drain the pasta and transfer to an oven dish, also add the leek and mushrooms. Stir in a bowl 200g creme fraiche and 100g gorgonzola until it is mixed well. Then stir the gorgonzola mixture into the pasta dish. Place the oven dish into a preheated oven at 180C (fan) for about 15 minutes. Enjoy
