Cook 1 finely chopped onion and 1 finely chopped garlic clove until the onion is soft. Add some thyme and 300g mixes mushrooms (shiitake,mushrooms,chesnut mushrooms,oyster mushrooms) in slices. When the mushrooms are soft remove from the heat. Make a sauce with 125ml crme fraiche, salt, peper, paprika powder, 2 tablespoons cheese and tarragon. Fill the puff pastry shells with the mushrooms and pour over the creme fraiche mixture. Scatter some grated cheese over it and place the puff pastry shells in a preheated oven at 160C for about 20 minutes. Enjoy!
