Chop 4 tomatoes in small pats and put them on a baking sheet, season them and drizzle with olive oil. Place the baking sheet in a preheated oven at 180C for 10 minutes. Meanwhile make the sauce. Mix 3 tablespoons creme fraiche with 1 tablespoon mustard. Roll 500g puff pastry until you can cut out a circle of 28cm. But you can also buy a dough for pizza. Place the puff pastry on a baking sheet. Score a border about 1 1/2 centimeter in from the edge. Scatter some grated cheese in the circle, spread out the creme-fraiche mustard sauce. Place the roasted tomatoes on it and scatter 1 finely chopped garlic clove, some fresh thyme leaves, 1/2 mozzarella and at least some grated cheese again. Place the pizza in a preheated oven at 180C (fan) and bake for about 30 minutes. Enjoy!
