
I had some left-overs in the cupboard and fridge and i really needed to do something with those ingredients. I made some oven baked pasta. Cook the pasta, for example Farfalle, following the pack instructions ‘al dente’. Fry in some hot oil 1 finely chopped onion with 1 finely chopped garlic clove. When the onion is soft add 1 chicken breast (chopped in dices) and fry this until it is a brown. Then add 1 chopped grilled red pepper and 200g spinach. Fry this on a lower heat until the spinach is done, add 1 dessert spoon pesto, drain the pasta and add to the spinach and chicken. Put this in a oven dish. Make cheese sauce by melting 25g butter. When the butter is beginning to bubble add 25g plain flour. The mixure becomes thick. Then gradually pour in about 300ml vegetable stock. Keep stirring! When the sauce has a good thickness get the pan from the heat and add 50g grated cheese in it, melt the cheese while you stir the sauce. Pour the cheese sauce over the pasta in the oven dish. Scatter some pieces mozzarella over it and place the oven dish in a preheated oven at 165C (fan) for about 20 minutes. Enjoy!
