Pasta with Tomatoes

Bring a large pan of water to the boil, add some salt, then cook the pasta for about 10 minutes or according to pack instructions. Heat some oil in a frying pan on moderate heat. Add 1 finely chopped onion and 1 crushed garlic clove and cook stirring constantly until the onion is soft. Use a knife to split open 300 grams of pork sausages and squeeze out the meat and tip it into the frying pan with the onions. Cook for about 5 minutes, using a wooden spoon breaking up the sausage meat. Add 900 grams chopped tomatoes, bring it to the boil and then simmer the heat and cook for about 10 minutes, stirring frequently, until the tomatoes are soft and pulpy. Stir in some taragon and season it with salt and pepper. Add a handfull of chopped basil and the pasta. Just heat it a little more and serve. On the plate you can serve some grated cheese. Enjoy!
