Aubergine stuffed with Spinach, Tomato and Chorizo
Half an eggplant. Scoop some flesh out of the aubergine. Add some salt over the eggplant and fry them in a frying pan for about 4 minutes on the ‘flesh’-side. Place the eggplant halves onto a baking sheet. Meanwhile fry 50g finely sliced chorizo in hot oil, add 1 finely chopped tomato and 100g chopped spinach. Cook for about 4 minutes. Remove from the heat and season it well. Spoon the filling mixture into the eggplant halves. Sprinkle some grated cheese over it and put the bakingsheet into the preheated oven at 180C (fan) for about 15 minutes. We ate some potatoes with it. Enjoy!

Summerfruit Cake

Cake met Zomerfruit
Beat 250g butter with 250g sugar until pale and smooth. Gradually add 4 eggs and combine. Add 250g selfraising flour and 8g vanilla sugar. Mix it until it becomes smooth. Add 300g summerfruits (a mix of bilberries, blackberries, raspberries and strawberries) to the batter and stir it. Grease a cake tin and spoon the batter into the cake tin. The cake should be baked in a preheated oven on 160C (fan) for about 90 minutes. Add a skewer in the middle of the cake, when it comes out clean your cake is ready. Cool it down a little to get the cake out of the tin. Enjoy!
